Cabernet Sauvignon wines are grown worldwide. Cabernet Sauvignon was originally recognized for its use in blending with French Bordeaux wines. Cabernet Sauvignon wines thrives in a variety of soil types and climates. Today Cabernet Sauvignon wines are grown in Napa Valley, Washington, Chile, Australia, Argentina, and Italy among others. In the 1990s, scientists at UC Davis found that Cabernet Sauvignon was an offspring of Cabernet Franc and Sauvignon Blanc. Most Cabernet Sauvignon wines are high tannin, flavorful wines that are meant to be aged in oak for several years. To ease the tannins found in Cabernet Sauvignon wines, it is sometime blended with Cabernet Franc, Merlot, Malbec or Syrah. Cabernet Sauvignon wines tend to exhibit flavors and aromas of dark fruit (cherry, blackberry, blueberry, black currant), cedar, oak, tobacco, chocolate, mushrooms, etc. and pairs well with grilled red meats, red meat stews, game or hard cheese.
